		<description>Joel&#039;s model is fully functional and has been in use for many years in Moscow, Idaho.  They have a model that has been functioning for 27 years that includes a fantastic restaurant, coffee bar, local sustainable agriculture farm products and shelf-stable organic products from larger companies.  The people are well-educated patrons who have access to all the products that foodies crave in the local farm scene to include farm fresh eggs (we were staying on a farm that supplied them with eggs), fresh &amp; frozen meat from local farms, local cultured dairy products, local milk and a plethora of seasonal produce from local small farms.  My husband and I were blessed to grow up in this environment and continued the tradition when we lived in Heidelberg, Germany with the local farmer&#039;s markets surrounded by family run cafes that obtained the majority of their products from the local farmers.  

Local food works to improve the community and the economy.  We did not experience any issues with harmful pathogens in these environments.  We would benefit greatly as a country by inspiring similar food systems across the United States.</description>

		<description>How is this model different from a food co-op?  We have several smaller examples of this in the Valley, where retail grocery is combined with a diner/deli-type operation.  My wife and I were recently in Bozeman, Montana and their two-story co-op rivals the size of a Whole Foods.  The upstairs was a coffee/juice bar and dining area and the downstairs had a huge deli/kitchen processing the full variety of foods/goods Joel suggests.  We ate lunch and dinner there daily and picked up produce/fruits, etc. for our trips in between.  The co-op was always busy, though its proximity to Montana State University certainly helped.</description>

		<description>Just read my first issue of Flavor and imagine my surprise to find, amidst the ads for expensive food and wine, thoughtful writing on real issues!

Whatever you do, don&#039;t let Joel Salatin get away. I certainly don&#039;t agree with him on some subjects, but he&#039;s the kind of guy we need to hear from more often. His connection with the real world [as opposed to the foodie-weekender world usually represented in these kind of magazines] is so refreshing and needed. Here&#039;s a thinker and problem solver who can&#039;t be fit into any box. It&#039;s people like him who could possibly save the world [or a small corner of it].

I&#039;m looking forward to the next issue and reading more of what Joel has to say.</description>
